There are several gardens maintained by different classrooms. The one I help the children grow is the Early Childhood Garden attended by 85 children. We start seeds inside on a sunny windowsill, for example, tomatoes, basil, zinnias - and outside, for example, lettuce, parsley, radishes.
Our harvest is typically enough for several days of snacks in Spring and Fall, and, typically, we make a giant batch of tomato sauce, too, for later use.
The garden has two composters, and we are working on getting a roof water collection system in place.
Our goal is mainly to help children connect with the natural world and to learn how food is grown using organic methods. There are other gardens, too, tied into curriculum, for instance, featuring the herbs of early America and another designed to attract butterflies.
